He has all the natty winemaker creds: a \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003efamily history of winemaking stretching back to 1840, diplomas from \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ethe elite schools, and experience working with the natural wine greats \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ein the Rhône where he discovered biodynamic farming. Yet he views \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ebecoming a great winemaker to be a process of “unlearning”.\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eHis farms a bunch of micro-parcels around the area, with soils that \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eare predominantly granite, clay and the “Pierres Dorées”, a local and \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eunique limestone formation pigmented with iron oxide, all with a \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003evolcanic rock base that Gamay vines especially love. He does \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eeverything himself, down to driving the delivery truck and composing\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003ethe verses inscribed on the side of his wine labels - David is an \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eenthusiastic rapper and poetry aficionado.  Even the names of the \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eindividual wines are personal, like this “Gamayhameha” that is an \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ehomage to Dragonball, a popular anime series he watched as a kid (he's \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ea HUGE anime fan).  His fixation on terroir specificity means that he\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003evinifies and bottles almost every plot separately, resulting in as \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003emany as 18 different cuvées from his small 5 hectare estate, so \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ethere's not much to go around.\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eThe grapes for 'Gamayhameha' come from a small, old vineyard of stony \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eclay soils in the lieu-dit (specific part of a single vineyard) called \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eLa Caillotiere in the village of Denicé. The wine is concentrated, \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ewith a silkiness and depth to the bright berry fruit, and some grippy, \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eslightly peppery structure. It’s floral and seductive, and then it’s\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eall stony and layered in the mouth.
